s Baked Oatmeal   


Even a lot of people who say they don't like oatmeal all seem to enjoy this moist and sweet variation.

Yields: 6 Servings

Ingredients

3 Cups Oatmeal
1 cup brown sugar
1 cup skim milk
1/2 cup oil OR applesauce
2 eggs
2 teaspoons Baking Powder
3 teaspoons vanilla extract
2 teaspoons cinnamon


 
Instructions
Chopped fruit of choice (our favorites are mango and apple)
Combine all ingredients in bowl and mix well. Spread evenly in 13 x 9 x 2 pan.
Bake at 350 for 25 - 30 minutes.
